Ingredients

- 2 chicken breasts, diced
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- Soy sauce to taste
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the garlic and bell pepper and cook for another 2 minutes.
- Stir in the zucchini and cook until tender, about 3-4 minutes.
- Season with soy sauce, salt, and pepper.
- Serve over cooked rice.
Notes
Let the chicken rest after cooking to allow the juices to settle. For added flavor, consider sesame seeds or a squeeze of lime on top.
