Skinny Chicken and Roasted Potato Bowl

Ingredients
2 lean chicken breasts
1/2 cup barbecue sauce
2 cups broccoli florets
4 medium potatoes, cut into bite-sized pieces
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper

Instructions
Preheat the oven to 400°F (200°C) and position the rack in the middle.
Toss the potatoes with olive oil, salt, and pepper, then spread on a baking sheet and roast for about 25-30 minutes, or until golden and tender.
Meanwhile, season the chicken breasts with salt and pepper, and cook in a skillet over medium heat for 6-8 minutes per side until cooked through.
Add the barbecue sauce to the chicken and cook for an additional 2-3 minutes to meld the flavors.
In the last 10 minutes of roasting, add the broccoli to the baking sheet, tossing it with a little olive oil and salt.
Serve the barbecue chicken over the roasted potatoes and broccoli, and enjoy!

For meal prep, pack the chicken separately from the potatoes to maintain texture.
