Skinny Chicken and Roasted Potato Bowl

Ingredients

  • 2 lean chicken breasts
  • 1/2 cup barbecue sauce
  • 2 cups broccoli florets
  • 4 medium potatoes, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and position the rack in the middle.
  2. Toss the potatoes with olive oil, salt, and pepper, then spread on a baking sheet and roast for about 25-30 minutes, or until golden and tender.
  3. Meanwhile, season the chicken breasts with salt and pepper, and cook in a skillet over medium heat for 6-8 minutes per side until cooked through.
  4. Add the barbecue sauce to the chicken and cook for an additional 2-3 minutes to meld the flavors.
  5. In the last 10 minutes of roasting, add the broccoli to the baking sheet, tossing it with a little olive oil and salt.
  6. Serve the barbecue chicken over the roasted potatoes and broccoli, and enjoy!

  1. For meal prep, pack the chicken separately from the potatoes to maintain texture.
