- 2 lean chicken breasts
- 1/2 cup barbecue sauce
- 2 cups broccoli florets
- 4 medium potatoes, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon salt

Instructions
- Preheat the oven to 400°F (200°C) and position the rack in the middle.
- Toss the potatoes with olive oil, salt, and pepper, then spread on a baking sheet and roast for about 25-30 minutes, or until golden and tender.
- Meanwhile, season the chicken breasts with salt and pepper, and cook in a skillet over medium heat for 6-8 minutes per side until cooked through.
- Add the barbecue sauce to the chicken and cook for an additional 2-3 minutes to meld the flavors.
- In the last 10 minutes of roasting, add the broccoli to the baking sheet, tossing it with a little olive oil and salt.
- Serve the barbecue chicken over the roasted potatoes and broccoli, and enjoy!
