Slow Cooker Honey Garlic Chicken

Ingredients

  • 2 pounds boneless skinless chicken thighs or breasts
  • 1 cup low sodium chicken broth or water
  • 1/2 cup honey
  • 1/3 cup soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 tablespoon cornstarch (optional)
  • 2 tablespoons cold water (to mix with cornstarch)
  • 1 tablespoon olive oil (optional)
  • Salt and pepper to taste
  • Sesame seeds and chopped green onions (for garnish)

Instructions

  1. Prep the chicken. Pat the chicken dry and season lightly with salt and pepper. Optional: sear in a hot pan with oil for 1 to 2 minutes per side.
  2. Make the sauce. In a bowl, whisk together honey, soy sauce, minced garlic, and vinegar. Add chicken broth and stir.
  3. Layer in the slow cooker. Place chicken in the slow cooker and pour sauce over evenly. Stir gently.
  4. Cook low and slow. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours until chicken reaches 165°F.
  5. Thicken the sauce. Remove chicken and mix cornstarch with cold water in a small bowl. Pour into the slow cooker and let thicken for 10 to 15 minutes.
  6. Finish the chicken. Return chicken to sauce and toss to coat. Adjust seasoning as needed.
  7. Serve it up. Spoon over rice, noodles, or veggies and garnish with sesame seeds and green onions.

Notes

  1. For gluten-free, use tamari instead of soy sauce. This recipe can also be made on the stove.
