A delicious and effortless slow cooker honey garlic chicken that yields sticky, sweet, and garlicky chicken with minimal effort.

- 2 pounds boneless skinless chicken thighs or breasts
- 1 cup low sodium chicken broth or water
- 1/2 cup honey
- 1/3 cup soy sauce
- 4 cloves garlic, minced
- 2 tablespoons rice vinegar or apple cider vinegar
- 1 tablespoon cornstarch (optional)
- 2 tablespoons cold water (to mix with cornstarch)
- 1 tablespoon olive oil (optional)
- Salt and pepper to taste
- Sesame seeds and chopped green onions (for garnish)
Instructions
- Prep the chicken. Pat the chicken dry and season lightly with salt and pepper. Optional: sear in a hot pan with oil for 1 to 2 minutes per side.
- Make the sauce. In a bowl, whisk together honey, soy sauce, minced garlic, and vinegar. Add chicken broth and stir.
- Layer in the slow cooker. Place chicken in the slow cooker and pour sauce over evenly. Stir gently.
- Cook low and slow. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours until chicken reaches 165°F.
- Thicken the sauce. Remove chicken and mix cornstarch with cold water in a small bowl. Pour into the slow cooker and let thicken for 10 to 15 minutes.
- Finish the chicken. Return chicken to sauce and toss to coat. Adjust seasoning as needed.
- Serve it up. Spoon over rice, noodles, or veggies and garnish with sesame seeds and green onions.
Notes
For gluten-free, use tamari instead of soy sauce. This recipe can also be made on the stove.
