Slow Cooker Queso Chicken Tacos

Ingredients

  • 2 pounds chicken breasts or thighs
  • 1 taco seasoning packet or 2 tablespoons homemade taco spice
  • 1 can diced tomatoes and green chiles, drained slightly
  • 16 ounces Mexican cheese dip or queso
  • Tortillas (corn or flour)
  • Taco toppings: shredded lettuce, chopped cilantro, diced onion, lime wedges, sliced jalapenos, sour cream, extra cheese

Instructions

  1. Place the chicken in the slow cooker.
  2. Sprinkle taco seasoning over the chicken.
  3. Add diced tomatoes and green chiles on top.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. 30 minutes before serving, stir in the Mexican cheese dip.
  6. Once cooked, shred the chicken and mix well with the sauce.
  7. Serve in tortillas and add your favorite taco toppings.

Notes

  1. If your queso is very thick, stir in a splash of milk to loosen it before adding to the slow cooker.
