A simple and satisfying slow cooker recipe featuring creamy queso-covered chicken perfect for taco night.
Ingredients

- 2 pounds chicken breasts or thighs
- 1 taco seasoning packet or 2 tablespoons homemade taco spice
- 1 can diced tomatoes and green chiles, drained slightly
- 16 ounces Mexican cheese dip or queso
- Tortillas (corn or flour)
- Taco toppings: shredded lettuce, chopped cilantro, diced onion, lime wedges, sliced jalapenos, sour cream, extra cheese
Instructions
- Place the chicken in the slow cooker.
- Sprinkle taco seasoning over the chicken.
- Add diced tomatoes and green chiles on top.
- Cook on low for 6-8 hours or high for 3-4 hours.
- 30 minutes before serving, stir in the Mexican cheese dip.
- Once cooked, shred the chicken and mix well with the sauce.
- Serve in tortillas and add your favorite taco toppings.
Notes
If your queso is very thick, stir in a splash of milk to loosen it before adding to the slow cooker.
