Ingredients
1 can chickpeas, drained and rinsed
1 head cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon paprika (smoked for drama)
1/2 teaspoon cayenne pepper
Salt and pepper to taste
Fresh parsley or cilantro for garnish
Cooked quinoa or rice (optional)
Toppings of choice like avocado, tahini, lemon juice

Instructions
Preheat the oven to 400°F (200°C).
On a large baking sheet, toss the cauliflower florets with olive oil, cumin, paprika, cayenne, salt, and pepper.
Roast in the oven for about 25-30 minutes, or until the cauliflower is tender and browned.
In a separate pan, heat the chickpeas until warmed through.
To serve, layer cooked quinoa or rice in a bowl, top with roasted cauliflower, warmed chickpeas, and your favorite toppings.
Garnish with fresh parsley or cilantro and enjoy.
Notes
For a saucier spin, mix tahini with lemon juice and a splash of water for a drizzle.
