Ingredients

- 1 can chickpeas, drained and rinsed
- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika (smoked for drama)
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
- Cooked quinoa or rice (optional)
- Toppings of choice like avocado, tahini, lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- On a large baking sheet, toss the cauliflower florets with olive oil, cumin, paprika, cayenne, salt, and pepper.
- Roast in the oven for about 25-30 minutes, or until the cauliflower is tender and browned.
- In a separate pan, heat the chickpeas until warmed through.
- To serve, layer cooked quinoa or rice in a bowl, top with roasted cauliflower, warmed chickpeas, and your favorite toppings.
- Garnish with fresh parsley or cilantro and enjoy.
Notes
For a saucier spin, mix tahini with lemon juice and a splash of water for a drizzle.
