Spinach and Feta Quesadillas

Ingredients
2 cups fresh spinach
1 cup feta cheese, crumbled
4 large tortillas
1 tablespoon olive oil
Salt and pepper to taste

Instructions
Heat olive oil in a skillet over medium heat.
Add the fresh spinach and sauté until wilted.
Place one tortilla in the skillet and sprinkle half of the feta cheese evenly over it.
Add the sautéed spinach on top of the feta, and then sprinkle the remaining feta over the spinach.
Top with another tortilla and cook until golden brown, about 3-4 minutes.
Flip the quesadilla and cook the other side until golden brown and the cheese is melted.
Remove from the skillet, slice into wedges, and serve hot.
Notes
To keep the quesadilla crispy, ensure the spinach is well drained and avoid overstuffing the tortillas.
