Crunchy, cheesy, and green spinach and feta quesadillas that are quick to make and deliciously impressive.
Ingredients

- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 4 large tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the fresh spinach and sauté until wilted.
- Place one tortilla in the skillet and sprinkle half of the feta cheese evenly over it.
- Add the sautéed spinach on top of the feta, and then sprinkle the remaining feta over the spinach.
- Top with another tortilla and cook until golden brown, about 3-4 minutes.
- Flip the quesadilla and cook the other side until golden brown and the cheese is melted.
- Remove from the skillet, slice into wedges, and serve hot.
Notes
To keep the quesadilla crispy, ensure the spinach is well drained and avoid overstuffing the tortillas.
