Spinach and White Bean Soup

Ingredients

  • 2 cups fresh spinach
  • 1 can white beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional: lemon juice for serving

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add the white beans and vegetable broth, and bring to a simmer.
  5. Cook for 15-20 minutes, allowing flavors to meld.
  6. Stir in fresh spinach and cook until wilted.
  7. Season with salt, pepper, and a splash of lemon juice if desired.
  8. Serve warm.

Notes

  1. Taste as you go to adjust seasoning and don't forget to serve with bread for a complete meal.
