Spinach and White Bean Soup

Ingredients
2 cups fresh spinach
1 can white beans, drained and rinsed
1 onion, diced
2 cloves garlic, minced
4 cups vegetable broth
1 teaspoon olive oil
Salt and pepper to taste

Instructions
In a large pot, heat olive oil over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Stir in minced garlic and cook for another minute until fragrant.
Add the white beans and vegetable broth, and bring to a simmer.
Cook for 15-20 minutes, allowing flavors to meld.
Stir in fresh spinach and cook until wilted.
Season with salt, pepper, and a splash of lemon juice if desired.
Serve warm.
Notes
Avoid overcooking the spinach and remember to rinse the canned beans to keep the flavors fresh.
