Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and cook until translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add the white beans and vegetable broth, and bring to a simmer.
- Cook for 15-20 minutes, allowing flavors to meld.
- Stir in fresh spinach and cook until wilted.
- Season with salt, pepper, and a splash of lemon juice if desired.
- Serve warm.
