Ingredients
2 cups cooked rice
1 lb chicken breast, diced
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon ginger, minced
Green onions, for garnish
Sesame seeds, for garnish (optional)

Instructions
In a bowl, mix soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the sauce. Whisk until smooth and adjust to taste.
In a skillet, cook the diced chicken over medium heat until browned and cooked through, ensuring not to overcrowd the pan.
Pour the sauce over the chicken and cook for another 3-5 minutes until the sauce thickens, stirring to coat the chicken.
Serve the sticky chicken over cooked rice, garnishing with sliced green onions and sesame seeds.
Notes
Feel free to substitute chicken with tofu, shrimp, or tempeh. You can also add steamed broccoli or carrots for extra nutrition.
