Ingredients
4 salmon fillets (skin on or off)
Sweet chili sauce (jarred or homemade)
Rice (white, brown, or jasmine)
Mixed fresh vegetables (bell peppers, broccoli, carrots, or your choice)
Olive oil (a couple tablespoons)
Salt (to taste)
Pepper (freshly cracked)
Lime juice (from 1 to 2 limes)

Instructions
Preheat the oven to 400°F (200°C) and center the rack.
Place salmon fillets on a baking sheet and season with salt and pepper.
Brush each fillet generously with sweet chili sauce.
Bake salmon for 12 to 15 minutes until flaky but moist.
Cook rice according to package instructions and keep warm.
Sauté mixed vegetables in olive oil until tender and season with salt and pepper.
Serve salmon over rice topped with sautéed vegetables and a squeeze of lime juice.
