- 2 medium Sweet Potatoes
- 1 pound Ground Beef
- 1 medium Onion
- 4 cloves Garlic
- 1 cup Cottage Cheese
- 1/4 cup Hot Honey
- 1 Avocado, sliced
- 2 tablespoons Olive Oil
- Salt and Pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Wash and dice sweet potatoes into cubes, drizzle with olive oil, and season with salt and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25 minutes, tossing halfway through.
- In a skillet, heat olive oil, add chopped onion, and cook until translucent. Add minced garlic, then ground beef, cooking until browned (5-7 minutes). Season with salt and pepper.
- In a bowl, mix hot honey with cayenne or chili flakes to taste.
- Assemble the bowl by layering roasted sweet potatoes, ground beef, cottage cheese, hot honey drizzle, and avocado slices. Serve warm.
