Ingredients

- 1 cup cooked rice or quinoa
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- Lime juice, to taste
- Salt and pepper, to taste
- Olive oil, optional
Instructions
- In a large bowl, combine cooked chicken, corn, rice or quinoa, avocado, cherry tomatoes, red onion, and cilantro.
- Drizzle with lime juice and olive oil, if desired.
- Season with salt and pepper to taste.
