Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups corn (fresh, canned, or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 red onion, diced
  • 1 cup cooked rice or quinoa
  • 1/2 cup cilantro, chopped
  • Lime wedges
  • Salt and pepper to taste
  • Olive oil, for drizzling
  • Optional: hot sauce or BBQ sauce for drizzling

Instructions

  1. In a large bowl, combine the shredded chicken, corn, cherry tomatoes, avocado, red onion, and cooked rice or quinoa. Toss gently to avoid mashing the avocado.
  2. Drizzle with olive oil and squeeze fresh lime juice over the top.
  3. Season with salt and pepper to taste and mix gently until combined.
  4. Serve immediately in bowls topped with chopped cilantro and optional hot sauce or BBQ sauce.

Notes

  1. Avoid overdressing the bowl to keep the rice and avocado from becoming soggy. Add the avocado last for freshness.
