Tater Tot Casserole with Ground Beef

Ingredients
1 lb ground beef
1 can (10.5 oz) cream of mushroom soup
1 1/2 cups sour cream (use 1/2 cup for the recipe, rest optional)
1 small onion, diced
2 cups shredded cheddar cheese, divided
1 bag (32 oz) frozen tater tots
Salt and pepper, to taste
Optional seasonings (garlic powder, paprika, or any favorite spices)

Instructions
Preheat the oven to 375°F (190°C).
In a skillet over medium heat, cook the ground beef until browned. Add diced onion, salt, pepper, and optional spices. Drain excess fat.
Stir in the cream of mushroom soup and sour cream. Heat through for 2-3 minutes.
Grease a casserole dish and layer the beef mixture evenly.
Sprinkle 1 cup of shredded cheddar cheese over the beef.
Arrange frozen tater tots in a single layer on top.
Bake for 25-30 minutes until tater tots are golden and crispy.
Add the remaining 1 cup of cheddar cheese and bake for an additional 5 minutes until melted.
Cool for 5 minutes before serving. Garnish as desired.
Notes
Feel free to customize the casserole with extra spices, vegetables, or cheese varieties. Ensure to drain the beef to avoid sogginess.
