Ingredients

  • 1 pound ground turkey
  • 1/2 cup cooked rice
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup diced carrots
  • 1 cup diced zucchini
  • 1/2 cup chopped cilantro
  • Juice of 1 lime

Instructions

  1. In a bowl, combine the ground turkey, cooked rice, egg, garlic powder, onion powder, cumin, salt, and pepper. Mix thoroughly using your hands.
  2. Form the mixture into walnut-sized meatballs.
  3. In a large pot, bring the chicken broth to a boil.
  4. Add the diced tomatoes, carrots, and zucchini to the pot.
  5. Reduce the heat and gently drop in the meatballs.
  6. Let it simmer for about 20 minutes.
  7. Stir in the chopped cilantro and lime juice.
  8. Ladle the soup into bowls and serve immediately.

Notes

Avoid overmixing the meatball mixture to maintain tenderness and mix only until combined. This soup can also be frozen for later enjoyment.
