Ingredients

- 1 pound ground turkey
- 1/2 cup cooked rice
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 6 cups chicken broth
- 1 cup diced tomatoes
- 1 cup diced carrots
- 1 cup diced zucchini
- 1/2 cup chopped cilantro
- Juice of 1 lime
Instructions
- In a bowl, combine the ground turkey, cooked rice, egg, garlic powder, onion powder, cumin, salt, and pepper. Mix thoroughly using your hands.
- Form the mixture into meatballs.
- In a large pot, bring the chicken broth to a boil.
- Add the diced tomatoes, carrots, and zucchini to the pot.
- Reduce the heat and gently drop in the meatballs.
- Let it simmer for about 20 minutes.
- Stir in the chopped cilantro and lime juice.
- Ladle the soup into bowls and serve immediately.
Notes
Optional substitutions include using chicken or beef in place of turkey and trying different vegetables based on availability.
