Vegan Garlic Chickpea Soup

Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until they are softened, about 5-7 minutes.
  2. Stir in the minced garlic, cumin, and paprika, and cook for another minute until fragrant.
  3. Add the chickpeas and vegetable broth to the pot, bringing it to a boil.
  4. Reduce the heat and let the soup simmer for 15-20 minutes.
  5. Use an immersion blender to blend the soup to your desired consistency, or leave it chunky if preferred.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley if desired.
