Ingredients

  • 6 cups watermelon (seeded and cubed)
  • 1 English cucumber (chopped)
  • 6 oz feta cheese (cubed)
  • Handful of chopped fresh mint leaves
  • 1 fresh lime (zest and juice)
  • Sea salt flakes and fresh ground black pepper (to taste)

Instructions

  1. Add cubed watermelon into a large serving bowl along with the rest of the ingredients.
  2. Very gently toss to combine.
  3. Taste test, and adjust if desired.
  4. Serve and enjoy!

Notes

  1. For best flavor, use ripe and juicy watermelon. Serve fresh to maintain crunch.
