Ingredients
2 cups watermelon, cubed
1 cup cucumber, diced
1 cup strawberries, sliced
1/4 cup red onion, thinly sliced
1/4 cup fresh mint leaves, chopped
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste

Instructions
In a large bowl, combine the watermelon, cucumber, strawberries, and red onion.
Toss gently so nothing gets mashed.
In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
Taste the dressing and adjust salt and pepper if necessary.
Drizzle the dressing over the salad and toss gently to combine.
Garnish with fresh mint leaves.
Serve chilled as a refreshing side dish.
