  • 1 cup chicken broth (low sodium)
  • 1 cup heavy cream or whole milk
  • 1 cup shredded cheddar or a melty cheese blend
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and pepper to taste
  • 2 cups baby spinach or kale
  • Cooked rice or pasta to serve

Instructions

  1. Heat skillet over medium-high and add oil. When oil shimmers, add chicken pieces seasoned with salt and pepper; sear until golden, about 4 to 5 minutes.
  2. Push chicken to one side and add onion and bell pepper; cook until softened, about 3 minutes.
  3. Add garlic and mushrooms; cook for one minute.

  8. Return chicken to the sauce, warming through for another 2 minutes.
