White Bean Soup with Bacon

Ingredients

  • 1 pound white beans (such as great northern or cannellini), soaked overnight
  • 6 cups chicken or vegetable broth
  • 4 strips bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Add the onion, carrots, and celery to the pot and sauté until softened, about 5-7 minutes.
  3. Stir in the garlic and thyme and cook for an additional minute.
  4. Drain and rinse the soaked beans, then add them to the pot along with the broth.
  5. Bring to a boil, then lower the heat and let simmer for about 90-120 minutes, or until the beans are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with the crispy bacon and fresh parsley.

Notes

  1. Soak the beans overnight for best results. Adjust seasoning based on the saltiness of the broth and bacon.
